Welcome to 2017! I hope that a fresh, new year means that some of you might want to join me on my low-carb journey. If you are new to these posts, they are a monthly wrap up of the coolest (or worst, in some cases) meals I posted on Instagram. The first part of December was pretty boring, and a lot of the same ol’, same ol’. I did get a bit more adventurous as the month went on. Do you know what though? I’m happy to be back to the same ol’. (PS, this post has a few Amazon affiliate links… thanks for your support!)
So, here we go…
On the go… I LOVE that I can still enjoy Shawarma, because I puffy heart it so bad! Mezza, here in Nova Scotia, offers Shawarma bowls now, which are low carb right out of the gate, with no list of modifications required.
Cauliflower rice is still front and centre. This time I added it to some grass-fed beef (yay for finally finding a reliable local supplier, AND they deliver! If you are local, check out Wild Mountain Farms).
I drink quite a bit of coffee and tea and thought I would spoil myself by getting a crap ton of fancy teas from David’s Tea as a treat to myself. After going through a Best of 2016 sampler AND the #24DaysofTea Advent Calendar, I know that David’s Tea is not for me and (in my opinion) not that good and EXTREMELY overpriced.
More grass-fed beef… yum! Tired of regular caulimash? Blend in some spinach!
December saw a ton of hemp heart experimentation… which is good, because I have a huge Costco-sized bag in my fridge. Hemp hearts make a PERFECT substitution for bulgur wheat in tabouli and I even found a low-carb keto falafel recipe that uses them… they were soooooo good!
Another cheeseburger casserole from Low Carb Yum. This is probably my favourite low-carb casserole to date.
Low-carb chili made its first appearance this month… basically you just skip the beans, it’s not rocket science. Dress it up with some avocado (the frozen President’s Choice stuff has been a Godsend), full-fat sour cream and some cheddar and holy yum.
I paired it up with a new low-carb biscuit recipe from All Day I Dream About Food, which is now my go-to recipe.
Christmas baking happened! I made Pecan Snowballs AND Pecan Toffee Bars… both of which were very low carb and delicious! I linked to the recipes, should you want to bookmark them for next year. Hint: you do.
Holiday entertaining happened. You’ll note a lot of carbs in this next photo, but you’ll also see a lot of low-carb/keto goodness that I could enjoy… pepperoni, cheese, veggies, pecans stuffed with olive cream cheese, smoked salmon, shrimp and some delicious macadamia nuts *drool*.
The rest of 2016 included a lot of turkey and a lot of eggs. I even made a low-carb stuffing made from an almond bread that was really good! So good, we all ate it up before I could get a shot of it. The bread recipe though, SO GOOD! I’ll be making it again with the original additions of cheese and jalapeños. Christmas morning brunch? This festive crustless quiche, served with hollandaise (of course).
I’m not gonna lie, there was more than one pity party held over the holidays as everyone chowed down on endless chocolates and chips, even with all of the yumminess above. I stuck to plan though, which in the end, now that the (Pringles) dust has settled, means a lot to me and makes me proud.
