As promised, November was a bit of a ‘back to basics’ month. Not really much in new or noteworthy in the #lowcarbmmm world, with a few exceptions…
This ‘Gingerbread Mug Cake’ has morphed into my favourite ‘Mug Muffin’ ever. Swap the gingerbread spices for ceylon cinnamon, and add a tiny bit of chopped extra dark chocolate or a couple of blueberries and you’ve got a bran muffin dead-ringer, in my opinion. These pack 1/4 cup of ground flax seed a go, so I’ll only have one or two a week IYKWIM…
This Hollandaise Sauce in a bottle from President’s Choice has been a big hit. It does contain canola though, which I try to avoid because of its inflammatory properties, so I’m trying not to put it on EVERYTHING (even though I want to).
When I’m not slathering things in Hollandaise, I’m dipping it in my homemade olive oil (non-inflammatory) mayo. It’s a breeze to make with an immersion blender, and I also posted a how-to video on Instagram.
I’ll definitely make this Cheeseburger Soup again. Like many soups, it’s better the next day. Those biscuits though? They set my damn oven on fire! Gah. I’ve since found a low carb biscuit recipe that won’t burn the house down.
Lots of ‘snacky’ lunches were had during November… nothing fancy, just keeping it real.
Speaking of not fancy, how does weiners and sauerkraut hit ya? For me, it hit the spot.
If you see a strawberry mug cake on Pinterest that looks delicious, skip it. It’s nasty.
I didn’t eat out much in November, but on the way to Neptune Theatre to see Miracle on 34th Street, Chelsea and I went to East Side Marios. I did manage to find something that fit…a grilled NY Striploin, veggies and lots of butter (and a huge Caesar salad sans croutons to start).
