Since the first of July, I have been eating a low carb diet. For the most part, no sugar, no grains, yada yada yada, I feel incredible. While weight loss was not the goal, it has certainly been a nice side effect. Every day people ask me what I’m possibly eating if not the almighty carb? I’ve been sharing my meals as much as possible on Instagram (search the #lowcarbmmm hashtag) and thought it would be fun to do a monthly recap here on my blog of my favourites and the ones that got the most attention.
So while this is first edition is named September, it actually goes back to July. So here, my friends, is what I’ve been eating:
Bacon & Eggs – yep, I eat this a lot 🙂
Sauerkraut has become one of my favourite things ever… and it makes my belly very happy – fermented foods do that! I have to watch sausages though, some are loaded with wheat and other fillers.
I will stuff pretty much anything in a zucchini. That night it was tacos! So good. I’ve also made tuna melts in them.
McDonalds Create Your Taste Lettuce Wraps w/ guacamole… I’ve eaten a LOT of them 😉
LOTS of cauliflower. I eat it roasted, steamed, mashed and riced. It’s amazeballs. I’m trying to eat more fish too… and I love these PC bacon-wrapped salmon filets, so we’ve had them quite a bit.
This eggy cheeseburger casserole was a huge hit. I need to do it up in a post someday!
I made this last night and it was SO GOOD and also got a lot of attention on Instagram… I guess I’ll be doing a blog post on this one too – Brussels Sprouts and Bacon Gratin.
Caesar salad (without croutons) and meat are a great go-to when I’m eating out… Swiss Chalet has become a favourite (I only eat about half the sauce AND I swirl in a pat of butter… it makes it AMAZING! Try it!)
Not bad eh? I’ve lost almost 30 pounds in 3 months eating this low-carb wonderfulness.
