If you follow me, you know I am a big Vega lover. Thankfully, it’s one of the foods that has followed me over into my new way of eating. When Vega and Silk contacted me and wanted me to put together a simple smoothie for the #SilkSummerOfSmoothies, I had to think a bit. How could I add to my precious Vega (I’m a purist, I generally drink it with water or almond milk), and still keep it low carb?
At first, my mind went to pumpkin spice (hello? It’s September!), but you know what? I’m kind of pumpkin spice’d out… for real. So, back to the drawing board. Then, Vega sent me some product and I was hyped to see a package of Coconut Almond Vega One (no added sugar, dairy or soy. It’s full of Omega-3s ALA, antioxidants and 1 billion CFU probiotics) included. I’ve been trying to get my hands on one of these samples for ages- I hate buying a big tub before I’ve tried the flavour.
Lately, I’ve been drinking the Unsweetened Silk Almond Coconut Blend anyway (40 calories per serving, no added sugar, artificial flavours or colours, low carb goodness), so I knew I had the base and the liquid down, now what could I add to yum it up and keep it low carb? Almond butter!!! Simply adding 2 tbsp of almond butter to my smoothie and a few ice cubes made this my new Vega favourite. Holy yum.
How does this stand up macro-wise?
Heather’s Coco Almond Loco Smoothie
1 packet Vega One Coconut Almond, 1.5 cups Unsweetened Silk Almond Coconut Blend, 2 tbsp Almond Butter, 4 ice cubes – Blended in blender.
Carbs (Net): 9.5 g
Fat: 28.5 g
Protein: 26.5 g
Nice! Adding the Almond Butter bumped up my fat count without adding tons of protein. At 9.5 net carbs, it’s about as high as I like to go, but it’s indeed a filling, full meal- so yay!
I currently have a tub of Vega One French Vanilla and Mocha on the go, so I’m going to have to get through those before I can get me a tub of Coconut Almond, it is my new fave.
