No air conditioning in this house (yet). That means summer cooking consists of lots of grilling and meals that need minimal stove time, ie: pasta and veggies!
Fresh, local vegetables abound in Nova Scotia over the summer. I asked my readers where their favourite Farmer’s Markets were and realized, wow, we have so much choice. From the huge markets, like the iconic Halifax Seaport Farmers’ Market and Masstown Market, to smaller community markets like Waverley’s Vegetorium (best name ever!) and Noggin’s Corner in Greenwich, down to the popular end-of-the-driveway, honour system, put your money in the Mason jar and help yourself (how awesome is it that they still exist!), there is no reason for us to not ‘eat a rainbow’.
The rainbow doesn’t have to stop with our produce though. The Catelli Bistro line-up consists of tri-coloured selections and gourmet inspired varieties the whole family can enjoy, have zero trans fats, no preservatives and are a source of iron.
The recipes on Catelli.ca provide so much inspiration for our summer menus. Take, for example, this Grilled Zucchini, Eggplant and Red Onion Fusilli with Parmesan Cheese with Teriyaki Chicken Tacos recipe – it’s wonderful and if you weren’t in a taco mood, you could switch it up with any grilled protein.
This one is a snap to put together and your family will definitely be eating a rainbow.
