While I’ve been known to whine about my daughter’s picky eating (which has been coming along nicely this year… we can now add green beans and bacon to her growing list of approved ingredients), I realize how lucky we are to have no actually food sensitivities in our immediate family. When it comes to extended family and friends though, we don’t have to look far to find those who can’t eat peanuts, lactose or gluten.
This spring, the President’s Choice team is dedicated to helping all Canadians find freedom in “-free” products, by showing consumers they can explore new and unexpected flavours and embrace culinary trends, no matter their dietary needs – because limits to what a person can eat shouldn’t limit what they can enjoy.
One brush we had with lactose-free living was when Chelsea was 3. We had just returned from vacation and Chelsea had a really bad stomach bug and it was being severely aggravated by dairy… which she basically lived off of at that point. Knowing we couldn’t just pull dairy from her already limited diet, we travelled all over Halifax simply to find lactose-free milk and yogurt options, which also came at a premium cost.
This lactose-free and also gluten-free Scalloped Potatoes recipe was made using the easily available and affordable Lactose-Free line of President’s Choice products. Using 2% yogurt instead of the standard milk or cream, not only gives this dish an unexpected freshness but it also cuts down on the total fat content. By using President’s Choice Gluten-Free All-Purpose Flour Blend instead of wheat flour, I also made it a gluten-free dish.
#CompromiseFree Scalloped Potatoes – Serves 6
- 6 cups thinly sliced peeled Russet potatoes
- 1 medium cooking onion, thinly sliced
- Salt & Pepper
- 1 cup President’s Choice Plain Lactose-Free 2% M.F. Yogurt
- 1 1/2 cups warm water (use the potato cooking water)
- 12 PC Fresh Chives – chopped, divided
- 3 tbsp PC Lactose-Free Margarine (plus a bit more to grease your baking pan)
- 3 tbsp PC Gluten-Free All-Purpose Flour Blend
- 1 cup shredded PC Lactose-Free Swiss Cheese (there are also PC Lactose-Free Marble, Old Cheddar, and Old White Cheddar varieties available if you’d prefer)
Add the sliced potatoes and onion to a large pot of boiling salted water and par-boil for 5-7 minutes to start softening them. While they are cooking, carefully remove 1 1/2 cups of the cooking water and combine with the yogurt to create a milk-like mixture and add half of the chopped chives. Once the potatoes are ready, drain them and place them in a greased 9 x 13″ baking dish. Sprinkle them with salt and pepper. In the pot where you boiled the potatoes (save dishes, right?), melt the margarine over medium heat and whisk in the flour. Add the yogurt mixture all at once and continue gently whisking for 5 minutes or so, until the mixture has thickened. Pour the thickened sauce over the potatoes and onions, top will shredded cheese and bake in a preheated 375 degree oven for 30 minutes. When the potatoes are done, sprinkle with the remaining chives. For the best flavour, allow the Scalloped Potatoes to cool in the pan for at least 20 minutes before serving.
To continue the #CompromiseFree trend with our dinner, I paired the Scalloped Potatoes with green beans and PC Quinoa Chicken Breasts, which are new, Gluten-free, and tasty.
