Okay, this post took me wayyyy longer than it should have. I mean, hello? It’s Reese’s Spread! Reese’s Peanut Butter Cups are one of the best treats on Earth, but for the life of me I was having a hard time finding a recipe to try it in… all I wanted to do was eat it by the spoon.
I didn’t want to dilute its flavour (it’s exactly like the real deal… just in a spreadable form), and I was torn. In the end, I decided to try it swirled into banana muffins, and I’m glad I did. The peanut butter and chocolate along with the banana was a perfect mix, and swirling the spread straight from the jar meant the taste stayed true.
Reese’s Swirl Banana Muffins
- 3 large ripe bananas, mashed
- 1/3 cup packed brown sugar
- 1 large egg, lightly beaten
- 1/3 cup melted butter
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 1/2 cups all-purpose flour
- Reese’s Spread (about 12 tbsp)
In a large mixing bowl, beat together the mashed banana, eggs, brown sugar and melted butter. Evenly scatter the dry ingredients over top and fold together, so that no dry bits remain, but also watch not to over mix. Divide the batter into 12 muffin cups and top each muffin with a heaping teaspoon of Reese’s Spread (I find the ‘one for me, one for a muffin’ technique works best). Using a toothpick, swirl the spread into the muffin as you wish. Bake in a preheated 375 degree oven for 20 minutes or until they test done.
