Don’t let the back-to-school ads fool you. Here in Canada, summer is just getting into full swing and we have a whole lot of beach/camping/cottaging/sailing/grilling left in us.
President’s Choice sent me a variety of items to make the coolest of summer treats and desserts. From the new PC Watermelon Crunch Ice Cream, sundae toppings and waffle bowls to the PC Pink Lemonade Squares, there is something to suit the tastes of any frozen dessert lover.
Me? Well it’s not a new PC product I am in love with this summer, but one from a few years ago. The PC Loads of Cherries & Chocolatey Chunks Ice Cream. It’s the bee’s knees. I love that the cherries are not maraschino (they belong on top of the ice cream, not in it, but that’s just MHO), and the chocolate chunks are large but you don’t break a tooth off when you bite them.
This ice cream flavour also pairs up wonderfully with brownies. I took my tried and true brownie recipe (seriously, I think you could add almost anything to this recipe and it would be incredible), subbed vanilla with Amaretto and oh my, this is a match made in heaven.
- 1/2 cup unsalted butter, melted
- 1/2 cup unsweetened cocoa powder
- 1 cup sugar
- 2 large eggs
- 2 tsp Amaretto or 1 tsp pure almond extract
- 1/2 cup all-purpose flour
- 1/4 tsp salt
In a large bowl, whisk together melted butter and cocoa powder. Add in sugar and mix well. Add the eggs, one at a time and mix in the Amaretto. Sprinkle the flour and salt over the wet mixture and stir lightly until all the flour is combined, but do not over mix. Pour into an 8″ square baking pan which has been lined with foil or parchment and greased lightly or sprayed with non-stick spray. Bake in a preheated 350 degree oven for 25 minutes. Allow to cool – well partially anyway, cut and serve.
