Bake sales have always been my favourite variety of fundraiser. I mean, hello? Treats! Knowing also that the funds raised will support families in developing communities, helping empower them with the resources they need to build a better future is the icing on the proverbial cake. This is what We Bake For Change is all about.
I made these Lemon Poppy Seed Doodles from Robin Hood’s Lemon Poppy Seed Quick Bread Mix, but I wanted to shake things up a bit. In the end, I made something totally unique that was ready to serve in less than 20 minutes… these Doodles would be adorable bagged in threes and tied with ribbon at any bake sale!
Inspired by last fall’s Pumpkin Doodles, these were a huge hit in our house. I made the batter as directed on the box (using just 1 egg instead of 2) and spooned it into a 24 mini-muffin tin and baked them for 12 minutes. After a minute, I removed the doodles from the pans, misted them with a quick spray of oil and then rolled them in white sugar. (Icing sugar would also be wonderful… maybe even better.)
To make them even more special, I filled them with some jarred lemon curd I had in the fridge, but blueberry jam would have been another great option. I put the curd in a piping bag and used a filling tip to add an extra burst of lemon. We were eating them in 20 minutes from opening the box and the kitchen was spotless.
