Another goal I’ve set for our family this year is to spend less (with the expectation that those savings will be spent on travel). One of the simplest ways to save some cash is to pack a lunch. Both Chels and Hubs take their lunches with them, but neither of them brown bag it. While Rubbermaid LunchBlox kits will keep your lunch fresh and tidy, a packed lunch is only as good as what you find inside. These Mini Carrot Muffins are kid-friendly, freeze well and well, carrots are vegetables, right?
Mini Carrot Muffins
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup sugar
- 1/2 cup milk (dairy, soy or almond)
- 1 1/3 cup grated carrots
- 1 1/2 cups all-purpose flour
- 1/2 cups whole wheat flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
In a large bowl, whisk together the melted butter, sugar, eggs and milk. Once well blended, add in the grated carrot and whisk to combine well. Mix the flours, baking soda & powder, cinnamon and salt in a large mixing bowl and then add the wet ingredients and stir lightly until just combined and no dry bits remain. Spoon into 24 mini muffin tins which have been lined or sprayed with non-stick spray. Bake in a preheated 375 degree oven for 12-15 minutes or until they test done with a toothpick.
These muffins, as well as the Rubbermaid LunchBlox kits aren’t just for kids, the grownups in my house like them too. The containers are microwave, dishwasher and freezer safe, making them perfect for taking leftovers for lunch, which is another great way to save some money (and time)!
