Another goal I’ve set for our family this year is to spend less (with the expectation that those savings will be spent on travel). One of the simplest ways to save some cash is to pack a lunch. Both Chels and Hubs take their lunches with them, but neither of them brown bag it. Mini Carrot Muffins
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup sugar
- 1/2 cup milk (dairy, soy or almond)
- 1 1/3 cup grated carrots
- 1 1/2 cups all-purpose flour
- 1/2 cups whole wheat flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
These muffins, as well as the Rubbermaid LunchBlox kits aren’t just for kids, the grownups in my house like them too. The containers are microwave, dishwasher and freezer safe, making them perfect for taking leftovers for lunch, which is another great way to save some money (and time)!
