Slightly sweet and chewy coconut, crunchy tandoori-spiced cashews and salty pretzels, this is a sweet and salty lover’s dream. I recently attended a Loblaw’s PC Holiday event and one of the best things I tried that night was their Bollywood Bits and Bites. This is my take on their recipe, and it’s so simple!
Tandoori Glory Snack Mix
- 1 tbsp coconut oil
- 2 tbsp Patak’s Tandoori Curry Paste
- 1/2 tsp ground cayenne pepper
- 1 1/2 cups whole cashews (mine were roasted/salted… if you use raw, add a wee bit of salt)
- About 200 g of your favourite pretzels
- 1 cup sweetened flaked coconut
In a skillet that may be transferred to the oven, heat the oil and cook the curry paste, stirring, for about a minute to release the wonderful spicy flavours and aroma. Then add the cashews, tossing to coat. Place the skillet in a preheated 350 degree oven and let the cashews get golden brown, about 12 to 15 minutes. Carefully remove the skillet from the oven and put into a large bowl along with the pretzels and coconut. Place a lid on the bowl or cover tightly with a large tea towel and gently toss the bowl so that all of the ingredients get combined and the flavours can mingle.
This snack mix is kid friendly, even with the added cayenne. It’s not overpowering and is a nice change from your everyday snack mix.
