Last year, Peanut Butter Cheerios were introduced to Canada and we Canucks were such fans that now they have returned… this time to stay! I’ve always been a Honey Nut Cheerios Fan, but the peanut butter variety has taken over top spot on my Cheerios hierarchy. The peanut butter flavour is so delicious and it mixes well with so many other flavours, like with milk and bananas, strawberries, chocolate or even with savoury flavours, such as sriracha and is a natural compliment to satay with spicy peanut sauce… and that’s where I went tonight.
With just 3 ingredients, I made a unique entree in less than 30 minutes. All I needed were some boneless skinless chicken breasts, cut into strips (you could buy breast filets and skip the slicing all together), our favourite bottled spicy peanut sauce and some Peanut Butter Cheerios. I let the chicken strips marinate in just enough spicy peanut sauce to coat while I crushed enough Cheerios in a bag to cover the chicken. For two sliced breasts, I used about a cup of Peanut Butter Cheerios. Once I shook the chicken in the bag with the crushed cereal, I placed them on a baking sheet that had been sprayed lightly with oil. I baked them in a preheated 350 degree convection oven for 22 minutes (conventional may take up to 5 minutes more). My baking sheet was the variety with holes in it, so I didn’t need to flip them… if you are using a standard baking sheet, you would want to flip them about 2/3 of the way through the cooking time.
