It’s National Chocolate Chip Cookie Day so I hear, and how awesome is it that I whipped up a batch using my oldest recipe just before finding this out. Spoooooky, eh? I think we might pack up some of these cookies, some fruit and water and head out for a midday picnic.
This is a recipe based off one from the Company’s Coming line of cookbooks… a series that sometimes I don’t give enough credit to – each book will have one or two gems buried inside. The only thing that makes these cookies different from most chocolate chip cookie recipes is the addition of some cornstarch and using just brown sugar. While the original recipe calls for margarine, I use butter, or in this case, a mixture of about 3/4 butter and 1/4 coconut oil, because that’s what I had. It’s cookies people, not rocket science – always remember that.
Chocolate Chippers – adapted from Company’s Coming Cookies
- 1 cup butter (or whatever… iYKwIM)
- 1 1/2 cups brown sugar, slightly packed (I used light, or golden)
- 2 eggs, large
- 1 tsp pure vanilla extract
- 2 cups all-purposed flour, spooned then levelled
- 1/4 cup cornstarch
- 1/2 tsp salt
- 1 tsp baking soda
- 2 cups semi-sweet chocolate chips
In stand mixer with paddle attachment or by hand, beat butter until creamy and whippy. Beat in the brown sugar and continue mixing until well creamed then beat in eggs one at a time. Stir in vanilla and then sprinkle the salt and baking soda over and then mix (my lazy way), then add in the cornstarch and flour, all at once and slowly mix until the dough comes together. Add the chocolate chips and fold them in with a wooden spoon. Using a small cookie scoop or a rounded tablespoon, scoop cookies onto baking sheets lined with parchment and bake them in a preheated 350 degree oven for about 11-12 minutes (convection) or 14-15 minutes (conventional). Leave some room for the cookies to spread, so no more than 12-16 cookies on an average-sized cookie sheet.
This recipe makes about 4 dozen cookies and they freeze well, which is exactly what I did with ours – after the mandatory testing cookies were sacrificed. Pop some out whenever you want them, they take minutes to thaw. Not only do CCCs make great ice cream sandwiches, they make awesome s’mores and well… taste pretty great all by their lonesome.
