Growing up, Tuna Melts were one of my favourite lunches. They still are, but since I’m not eating as much bread lately for a few reasons, I had to get creative.
I put hard boiled eggs in my tuna melt mix-up, so why not put tuna in an omelette?
My creation was a success! Hubs and I both loved it. We had it for lunch, but it’s one of those meals you could have any time of the day, it all depends what you pair it with.
To make this omelette for two, I used one can of tuna and mixed it up as I would for a tuna salad sandwich… just add in whatever you like. I meant to add a slice of crumbled bacon too but I forgot, double drat!
Once the tuna salad was prepped, I whisked up three eggs with a sprinkle of black pepper and dried parsley and poured it into a heated (med-high) non-stick skillet. Once the egg was about half cooked, I added all of the tuna salad to one side of the skillet and topped it with about half a cup (loosely packed) shredded smoked cheddar cheese. Of course, you could use any cheese you like. Once the egg was mostly cooked I flipped the bare half over on to the tuna side. I set it cook about 2 minutes more on each side (I had to flip it with two spatulas, it’s pretty heavy inside).
All of the yummy tuna melt taste with a lot less carbs (the oranges were garnish 😉 )! Have you created any interesting omelette concoctions? I’d love some more ideas!
