Nothin’ says lovin’ like some pasta from the oven… or something like that anyway. This warm & totally cheesy pasta bake totally deserves a big ‘Love you, Mom!’. It’s meatless and full of spinachy goodness that’s filled and topped with three cheeses… so good. Even better, this recipe takes one pan, minimal prep work, no pre-cooking of pasta and can be on the table in about 25 minutes, that’s what makes me declare my everlasting love for this family-friendly dish.
Baked Spinach & Cheese Ravioli
- 1 500g (2 x 250g) pkg Olivieri Spinach & Cheese Ravioli
- 1 300g container Olivieri Creamy Rose Pasta Sauce
- 2 tbsp extra virgin olive oil (divided)
- 1 cup cottage cheese (if you just happen to have Ricotta in the fridge, go at it)
- 1/2 cup grated parmesan cheese (divided)
- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup chopped fresh parsley
Use 1 tbsp of olive oil and use it to grease the bottom and sides of a 9×13″ baking pan. Spread 1 – 2 tbsp of the sauce on the bottom of the pan as well. Make 3 lines of ravioli, slightly overlapping. Top with a few tablespoons of sauce, half of the parmesan cheese and the cottage cheese, just dollop it on as shown above. Cover with another single layer of ravioli, 4-5 raviolis wide this time and not overlapping. Top with all of the remaining sauce and try to spread it so that there is a thin layer of sauce over each ravioli and drizzle with the remaining tbsp of olive oil. Cover with remaining parmesan, then sprinkle evenly with the shredded mozzarella. Bake uncovered in a preheated 350 degree oven for 20 minutes, using the broil feature for a couple of minutes at the end to get the mozzarella bubbly and browned if needed. Remove from oven and garnish with chopped fresh parsley.
