I resolved to fit more fruits and veggies back into my diet this year, namely at breakfast and lunch. Dinners are usually fine, but breakfasts for me lately have been a lot of Chelsea’s leftover cereal or Christmas sweets (yes, still). Smoothies are always an easy way to sneak in fruits and veggies, this one also has milk and yogurt… so it feels like a milkshake and a bit naughty, but it’s not.
Normally, when I make smoothies they contain strawberries and blueberries, but I wanted a bit of a change. This smoothie’s happy yellow colour is indicative of what I’m really wanting – the sun and some nice hot weather. Since that’s going to be a good while yet, I guess I should stock up on cantaloupes… which by the way, are high in vitamin C, beta carotene and rich in potassium.
- 1/2 cup milk
- 1 small individual container of plain, peach or nectarine yogurt (or about 1/2 cup)
- 1/2 a medium/large banana
- 1 cup frozen cantaloupe cubes
Put everything in a blender, blend on high for a minute or so and then get on with your day with a few servings of fruit and dairy literally under your belt. A sprig of mint, if you have some on hand would be an awesome and complimentary garnish… pop it right in the smoothie if you prefer.
