Did you ever come across a recipe that you couldn’t bookmark, couldn’t pin, that you had to just run and make right away? I had one of those moments last night when I came across Sugarcrafter’s No-Bake Biscoff-Oat Bars.
Trader Joe’s Speculoos Crunchy Cookie Butter has been my obsession since my dear sister-in-law brought me back jars of it from her trip south of the border. The Cookie Butter is their take on Biscoff Spread, which is a popular European alternative to peanut butter or Nutella. The taste of either takes me back to my childhood, when I would snack on the little windmill shaped speculoos cookies with my milky tea…
Whoa, I just drifted off there for a second.
Anyway, when I saw this recipe last night I ran to the kitchen. The best part? They are ready to go in the fridge in less than 10 minutes. The worst part? They have to sit in the fridge for about two hours before they are ready to eat. Actually, the best part is how awesome they are.
No-Bake Cookie Butter Bars
Adapted from Sugarcrafter
- 3/4 cup butter (unsalted preferable, salted works too!)
- 1/2 cup packed light brown sugar
- 1 tsp vanilla extract
- 3 cups quick (3 minute) oats
- 1 cup semi-sweet chocolate chips
- 2/3 cups Trader Joe’s Crunchy Cookie Butter
In a skillet, melt and mix the butter, brown sugar and vanilla. Once melted, add in the oats and stir over medium heat, letting the oats cook and turn a golden colour, no longer than 5 minutes. In another small pan, slowly melt the chocolate chips and then stir in the Cookie Butter to combine. In an 8″ square pan sprayed with non-stick spray, add 2/3 of the oat mixture and pat down firmly. Pour the chocolate/cookie butter mixture over top and spread to cover evenly. Sprinkle the remaining oats over the filling and pat down lightly. Put the bars in the fridge for at least 2.5 hours to firm up and watch the clock relentlessly.
