Chelsea and her Aunt Sarah share a birthday, so tonight we had a family meal for Sarah… everyone brought something with her second favourite crustacean, shrimp (her favourite is lobster, but you can’t always get what you want, haha). We were on a tight schedule this afternoon, so I needed a salad that I could pack up and put together quickly once we got to the party. This simple salad fit the bill and it’s dressing got lots of raves… now they’ll see how easy it actually was!
Shrimp Salad With Zesty Dressing
Adapted from Life Made Delicious
1 bag of prepared salad greens (all or half romaine)
1 English cucumber, quarted and sliced
1 cup grape tomatoes, halved
1/2 pound small or medium cooked shrimp, deveined and tails off
2 tbsp chopped fresh chives
1/3 cup ranch dressing
1/3 cup seafood sauce
Mix together the ranch dressing and seafood sauce (yep guys, that’s all it was) and set aside. In a large bowl, put in the greens and top with the tomatoes, cucumber and shrimp. Drizzle a bit of dressing on top, sprinkle with chives and serve.
Now on to the 4 year old’s party tomorrow ~ let’s hope the rain holds off, I have a bouncy castle on the way!
