The past couple of weeks have been a whirlwind of scraping, painting, weeding, planting, sliding and swinging. Spring is definitely in full bloom in Nova Scotia and today it feels like Summer won’t be that far behind.
Meals have consisted of a lot of grilled burgers and chicken and baking has been non-existent. I have an idea for an awesome cake that I am hoping to get started today, but it’s soooo nice out! We’ll see… no promises.
Because Summer is such a busy time (not to mention hot), I like to get a lot of the prep work for dinner done in the morning. This pasta salad is one that literally is ready to put in the fridge in 10 minutes if you are on your A game. Because most of the flavour comes from the store-bought dressing, it can also be made right before mealtime if last-minute guests arrive.
My Creamy Greek Pasta Salad
250g (1/2 lb) whole wheat Fusilli pasta, cooked, drained and rinsed with cold water
Litehouse Feta & Dill Salad Dressing (I find it in the refrigerated section at Sobeys), I use about half a bottle when I make this… but you could use a bit less 😉
1 tomato, chopped
1/3 cup whole kalamata olives (for the top)
1/2 cup crumbled feta (saving a bit for the top)
1/4 cup chopped red pepper
1/4 cup chopped green onion (saving a bit for the top)
Freshly ground black pepper to taste
After the pasta is cooked an cooled, mix in all the other ingredients in a large serving bowl… that’s it! So good with anything off the grill… especially souvlaki, or steak, steak always works.
