Last weekend I attempted waffles (again). I’ve been looking for a waffle recipe to use on a regular basis for years now and none of them have been working out. Some were too sweet, some were too greasy, some were just too tedious for me to bother with that early in the morning.
I think I’ve finally struck waffle gold! Give them a try this weekend and let me know what you think…
My Buttermilk Waffles
2 cups flour (spooned and levelled)
2 eggs, large
1 cup buttermilk
3/4 cup milk
1/3 cup canola oil
1/4 cup sugar
2 tsp baking powder
1/4 tsp salt
1 1/2 tsp vanilla
1/4 tsp cinnamon
In a large mixing bowl, whisk eggs until light and fluffy. Whisk in the buttermilk, milk, oil and vanilla. Add in the sugar and cinnamon and whisk lightly. Measure the flour into the bowl and add in the baking powder and salt. Using the whisk (why dirty another spoon), fold in the dry ingredients and once they are incorporated, give it a good ‘whisking’ for five seconds or so.
Once your waffle maker is preheated (med-high), spray with non-stick spray (my sister in law just brought me back some spray coconut oil from Trader Joes and it is awesome!), and fill as per your maker’s instructions. Allow to cook until golden brown… repeat until batter is all used up 🙂
Enjoy however you like, we always go for butter, real maple syrup and a side of bacon.
