We were so excited last week to harvest the first of the salad greens from the plants we have in our community garden bed.
Around the same time, Tre Stelle contacted me and wanted to know if I would like to try a recipe of theirs using their new Bocconcini Medallions, but sadly my grocery store hadn’t stocked them yet. All was not lost though as I picked up some of the whole Bocconcini and knew I wanted to include them in this salad. It’s also strawberry season here in Nova Scotia, so adding them was a no-brainer. What I came up with was this simple, yet delicious salad, topped with some raw almonds and a balsamic vinegar & evoo dressing. A bit of fresh cracked black pepper and dinner was served. I enjoyed how the mild fresh flavour of the Bocconcini evened out the acidity of the dressing and the bite of the fresher than fresh greens.
I can’t wait to try the Tre Stelle Bocconcini Medallions though, I love fresh mozzarella on pizza and I love having prep work done for me even more!

I also received a copy of Melt Magazine, which is loaded with recipe ideas and drool-worthy photos. I haven’t actually seen a copy before, so I was quick to sign up for a free subscription.
