We were having ribs last night for dinner and let’s face it, baby back ribs are just not going to make it to Cooking Light’s pages. Life is all about balance though, so I went looking on CookingLight.com for a healthy side that used ingredients I had on hand.
This warm salad is a nice combo of sweet and spicy, soft and crunchy. I subbed out the bacon for some sliced mini bella mushrooms and shredded mozzarella… one cut of pork in a meal is enough (whoa, did I just say that?). You can find the full recipe here.
