Summer has finally reached Nova Scotia! As such, there are many days when Mommy’s kitchen is closed. Well, it’s never really closed or there would not be the endless pile of dishes in the sink. Regardless, there is a lot less cooking and baking going on when the sun shines.
Muffins make a great breakfast, lunch or snack and they can be baked quickly in the evenings when it cools down or first thing in the morning. I try to get veggies into our little one any way I can, and while she didn’t devour these like my Banana Muffins with Greek Yogurt, she did eat them, which is a victory in itself.
